Finland could very well
have one of the richest bread selections in the world. The geographic
location between the Eastern and Western bread cultures has provided us with
influences from both sides.

Finns eat approximately 50
kg of bread per person every year. One third of that is rye bread. In Finland,
different regions of the country have their own rye traditions in addition to
the nationwide favourites. Internationally known rye specialties include
bite-sized breads, thin crisps and round crisps. Rye bread has long tradition
in Finland. It has been a food that kept our ancestors alive and fed the
farmers through many harsh winters. Rye bread has even earned a notable place
in the Finnish folklore.
Rye bread has been most
popular among the elderly population, but has recently gained ground among the
younger generations as well. Especially educated women have adopted rye as part
of their regular diet. Increasing knowledge of its health effects, as well as
new convenient products have contributed to this renewed interest.
For unaccustomed taste buds,
the flavour of rye may at first seem quite exotic. But that unique aroma is
exactly what separates rye from the rest. Rye bread has potential to provide
real culinary experiences.
