Rye has modest requirements
regarding soil, fertilization and climate. These properties give it an edge
over other crops in the northern latitudes. Rye is also exceptionally suitable
for organic farming.
The demand for organic
products has been on the increase in many other European countries as well.
Consumers in countries like Sweden, Denmark, England and Germany are favourable
towards organic farming, even though the market is still relatively limited. In
Finland as much as 24 % of rye crops were organically grown in 2002. The
proportion changes from year to year according to weather conditions. Finnish
bread made from locally grown rye has always held a clean and safe image in the
public.
